Today, I feel I should show some sympathy for all of you out there dealing with winter weather. I can feel some empathy, it is in the 60’s here…Ha! Sorry, I can’t help being a “Chamber of Commerce” proponent for Florida Living!

We have a great recipe coming straight from our wonderful manufacturer, Schar. We carry many of their gluten and wheat free food items in our allergen free food store, Allergiesandme.com. This recipe uses one of the products we sell, Ladyfingers. These little goodies are Gluten Free, Wheat Free, Soy Free and Dairy Free.  Try this one and let me know if it melted the snow around you while you ate it!!!

Gluten Free Pineapple Dessert, from Schar:         Gluten Free Pineapple Cream Dessert

Ingredients

1 can (20 oz.) sliced pineapple

Schär Ladyfingers

2 eggs

2 ounces sugar

9 ounces ricotta cheese

Directions

Drain the pineapple slices and set aside the liquid. Soak the Ladyfingers in the liquid and then lay in the bottom of a cake mold. Separate the eggs. Beat the egg yolk and the sugar together until frothy and add the ricotta cheese. Beat the egg whites until stiff and fold under the mixture carefully. Pour the crème over the Ladyfingers and cover with the pineapple slices that have been cut in half. Put into the freezer for 3 hours.
